Apple Oatmeal Pancakes – Soft, Healthy & Easy to Make

How about some pancakes? These are the easiest pancakes I’ve ever made because they come together in a blender! These fluffy oatmeal pancakes are not only delicious but also filling, making them perfect for a late breakfast. They’re also quick enough to make them any time of the week.

Apple oatmeal pancakes are incredibly soft, light, and fragrant, and can also be made vegan, gluten-free, and lactose-free. Thanks to the oat flour, they are richer in fiber and more nutritious, and the applesauce is silky, creamy, and healthy – you can also spice it up to your taste.

Oatmeal or wholemeal flour?

Oatmeal is a healthier alternative to all-purpose flour, as it is higher in fiber, aids digestion, and raises blood sugar levels more slowly. It’s easy to make at home: grind rolled oats in a coffee grinder until they’re a fine flour. Most recipes allow for replacing all-purpose flour with whole wheat flour ineal in cakes or breads without losing flavor or texture.

Ingredients

  • 1 cup oatmeal
  • 1 teaspoon baking powder
  • ½ cup milk (dairy or plant-based)
  • 3 tablespoons applesauce
  • pinch of salt
  • pinch of cinnamon (to taste)

Preparation Step by Step

  1. Add the oatmeal to a blender and grind until fine.
  2. Add baking powder, salt, cinnamon, applesauce, and milk. Blend until the batter is smooth and thick.
  3. Heat a nonstick pan over medium heat with a bit of oil.
  4. Pour 2–3 tablespoons of batter per pancake. Cook for 2–3 minutes, or until bubbles form on the surface. Flip and cook for another 2–3 minutes until golden brown.

My favorite toppings for healthy oatmeal pancakes:

  • Peanut butter or other nut butters.
  • Low-sugar jams, or homemade chia jam
  • Fresh fruits, such as sliced ​​bananas, strawberries, or blueberries.
  • A drop of maple syrup.
  • But it’s worth trying it with applesauce too, because it’s also very delicious!

Tips and Tricks

Don’t overmix the batter.

Only mix until the batter is smooth and free of large oat chunks. Overmixing the batter can result in thick and tough pancakes.

Without a blender.

If you don’t have one, replace the oatmeal with the same amount of oat flour, and whisk the batter by hand in a bowl. Just be careful not to pack the flour too tightly when measuring. Be aware that the pancakes may be a little chewier, but they will still taste delicious!
